Crockpot Pork Tacos

It’s taco Tuesday at my house and I’m making one of my family’s favorites, crockpot pork tacos! This is one of those no fuss meals you can make on a busy Tuesday or any day of the week. The pork is literally four ingredients! Add my homemade pickled onions and jalapeños on top and you have a meal that is jampacked with flavor for very little effort!

Ingredients:
2 pounds pork shoulder
1 large white onion, sliced
4 cloves of garlic, peeled
juice of 1 lime
Taco seasoning
Corn tortillas
Sharp cheddar cheese, gated
For the pickled onion
1 medium red onion, thinly sliced
1 jalapeño, sliced
1 bay leaf
1 garlic clove
3/4 cup white or apple cider vinegar
1/2 teaspoon pepper corns
1 teaspoon salt
2 tablespoons sugar
Method:
Add the onion and garlic to the bottom of the crock pot. Rub the pork with all the spices and place on top of the onions. Cook on high for 4 hours or on low for 6 hours. Remove the pork and shred the meat with two forks or chop with a knife. Return the pork to the pot with the onions and garlic, add the lime juice and give everything a mix. Put the cock pot on keep warm until you are ready to serve.
While the pork is cooking, make the pickled onions. Simply add the onion, jalapeño, garlic, bay leaf and pepper corns to a 16oz glass jar. Then, in a small pot add the vinegar, sugar, water and salt and heat until the sugar and salt have dissolved. Pour the liquid over the onions and jalapeños, screw the lid on, and place it in the fridge until you are ready to serve.

To serve, place a tortilla on a dry skillet on medium heat and add the cheese on top. Cover with a lid to allow the cheese to melt and the tortilla to soften. Once the cheese is melted, add the pork and pickled onions. Enjoy with a cold beer or margarita on the side!

We usually have some pork leftover, which is great because it’s wonderful on pizza with pineapple, mixed with potatoes and eggs for breakfast burritos or inside a grilled cheese sandwich!
