Iced Pumpkin Spiced Latte

I have to confess something… I don’t actually like pumpkin spice lattes. Every year, October rolls around and I think to myself, “Pumpkin spice latte, now that sounds delightful! A true marker of the fall season. Why don’t I like those again?” So, I head to Starbucks and order a tall pumpkin spice latte. It smells amazing, truly the only aroma that fits the falling-leaves season. I take that first sip and immediately remember why: these things suck! Too bitter, too sweet, somehow both at once, and completely lacking in actual pumpkin flavor!
Now, I know that’s a bit controversial. There are plenty of people who love their PSLs, I’m just not one of them. It’s almost like that cilantro thing some people have. To me, these pumpkin spice lattes just taste like soap. But this year friends, I’ve finally come up with my own pumpkin spice latte recipe, and I’m telling you; it’s a good one. It’s something I actually want to sip while I sit in my backyard, curled up in a blanket, rereading The Lord of the Rings. I can’t wait to share it with you all!

Makes one 16oz, iced latte
Ingredients:
For the pumpkin spice latte
1 cup milk
1/8 cup cream
2 tablespoons maple syrup
1 heaping tablespoon pumpkin puree
1/2 teaspoon pumpkin pie spice
splash of vanilla extract
pinch of sea salt
2-4oz espresso or very strong coffee
For the pumpkin whipped cream
1/2 heavy cream
2 tablespoons pumpkin puree
1 heaping tablespoon of powder sugar
Splash of vanilla extract

Method:
Make the whipped cream by placing all the ingredients in a small bowl and use a hand mixer to blend it together until soft peaks form. Set this in the fridge to use later.
Next, pour all the latte ingredients into a glass (except for the espresso). Blend the ingredients together using a frother wand.
Add ice and pour over the espresso. Top with the pumpkin whipped cream and a dash of pumpkin pie spice.

Fall, for me, is all about finding warmth in the simple things, a cozy blanket, a good book, something homemade in your favorite mug or glass. So, while the classic pumpkin spice latte might not be my cup of tea (or coffee), this new homemade version captures everything I love about the season: real pumpkin, gentle spices, and a feeling of slowing down and savoring. I hope it brings a little extra warmth and magic to your own autumn days!
