Peach Ice Cream & Waffle Cones

The mornings are just a bit cooler in late August. I poor my coffee while sitting on a blanket I brought home from London almost 13 years ago. It's soft and worn in and reminds me of a time when life was full of adventure. The sun shines down and I soak up the vitamin D. My kiddos wander out one by one joining me on the blanket as I sip my hot coffee. They bring out books we've collected from the library, and we read together in the morning sun. It's a bittersweet promise that summer is almost over and we will be starting our homeschool rutin again soon. New books arrive at the front door, fresh lesson plans are printed, and our days shift from summer freedom to a more structured routine.
But before we fully turn the page, I love to mark this in-between season with something sweet, a reminder that summer isn’t over just yet. And nothing says the end of summer then the last of the summer peaches. Peaches reach their peak just as summer starts winding down. They’re soft, fragrant, and full of sun-soaked flavor. Perfect for homemade ice cream.
I’ll be honest, making your own waffle cones feels a little extra. But oh, it’s worth it. They’re buttery, sweet and crisp what more can you ask for? So, before we’re knee-deep in early alarms (yes, even homeschoolers need them sometimes!), spelling tests, and science projects, it’s good to pause and make some homemade peach ice cream and waffle cones!

Ingredients:
For the peach ice cream:
Makes 2 quarts
529g (2 1/3 cups) whole milk
567g (2 1/2 cups) heavy cream
248g (1 1/4 cups) white sugar, divided
7 egg yolks
1 teaspoon vanilla extract
2 teaspoons fresh ginger, grated
pinch of salt
3 large peaches (about 1 cup), peeled and pureed. You can substitute frozen peaches
For the waffle cones:
Makes 8-10 cones
6 egg whites (1/2 cup)
150g (3/4 cup) white sugar
1 teaspoon vanilla
90g (1 1/2 cups) all-purpose flour
1/2 salt
60g (4 tablespoons) melted butter

Method:
Start with the peach ice cream. In a medium pot, heat the cream, milk and 1/2 cup of the sugar together till hot. Do not let it boil at this point. In a bowl add the egg yolks and the rest of the sugar and whisk it together. Add a ladle full of the hot milk and cream to the egg yolks and whisk it together to temper them. Add another ladle full to the yolks and whisk again. Now, add the yolk mixture back to the pot and whisk together. Stirring constantly, let the custard come to a simmer until it becomes thick enough to coat the back on a spoon.

Strain the custard into a bowl, add the peach puree, vanilla and ginger and mix it together. Place it in the freezer or fridge until it's cold. Once it's cold, pour it into the ice cream maker. Once the ice cream is done churning, scoop it into a container and place it in the freezer until fully set. While the peach ice cream is in the freezer make the waffle cones.
For the waffle cones, mix all the ingredients in a bowl. The batter will be thick. Once the waffle cone maker is pre-heated, dollop about 2 tablespoons of batter and press the lid down to make sure the batter spreads. Once the waffle is lightly brown, place on a cutting board and use the cone mold to roll it up. Roll the cone from the bottom, concentrate on keeping the bottom of the cone tight. The top of the cone will take care of itself. Once the cone is rolled, I held the mold down on the seam for a few seconds to be sure it would hold its shape. If you end up with a whole at the bottom of the cone (I did with quite a few) you can press a small marshmallow in the bottom or drizzle melted chocolate to fill the whole and keep the ice cream from leaking out.

As we head into fall routines and fresh notebooks, I’m reminded why I love marking seasons with food. Homemade peach ice cream in a crisp waffle cone isn’t just dessert; it’s a memory you can taste. A sweet reminder that even as schedules fill up and lessons begin, there’s always room to slow down, savor the moment, and celebrate home.
