White Chocolate Strawberry Popcorn Snack Mix

The other day my husband and I took our three kids to one of our favorite family friendly spots, Springs Preserve. After playing on the slides, a walk through the cactus garden and visiting the museum we headed to the cafe for lunch. My husband was placing our order at the counter when our three-year-old son, Edmund, ran up and stared asking for the brightly colored pink popcorn that was being sold near the register. I walked over and quickly told him, "No, buddy poison eww, eww". On our drive home, he continued to ask for pink popcorn, "Mom please I want pink popcorn!" So that got me thinking, could I make him some at home? Yes, I could and so can you!

I had so much fun making this white chocolate and strawberry popcorn! Every Friday we have our family movie night, and this was the perfect sweet treat to munch on while we watched "Cool Runnings". Edmund was so excited when he saw his pink popcorn! Now, this popcorn is fabulous on its own but if you want to go the extra mile, you can stop into your local Trader Joe's and make a mix that's perfect for Valentin's Day.

Ingredients:

1 cup, popcorn canals

2 tablespoons, olive oil

2 tablespoons, butter

Salt to taste

6oz, white chocolate, melted

.5oz freeze dried strawberries, powdered

3oz sugared rice cracker hearts (optional)

6oz freeze dried strawberry pieces in strawberry yogurt candy coating (optional)

5oz strawberry yogurt flavored almonds (optional)

Method:

1. Place the olive oil, butter and popcorn in a big pot and pop it. Once done, separate the popcorn onto 2 trays keeping one salted popcorn.

2. Drizzle over the white chocolate and then sift over the freeze-dried strawberries. Give the white chocolate strawberry popcorn a good toss then drizzle over more white chocolate and another coating of freeze-dried strawberries and toss again. Enjoy! It's ready to eat!

3. If you are making the snack mix, simply add the rice crackers, freeze dried strawberry pieces, almonds and the salted popcorn, toss it all together and enjoy at your next family movie night!
