Kid and Baby Friendly Weekday Breakfasts

I know every mom’s dream is to feed her kids simple and healthy meals, am I right? Sometimes that can be a tall order! Especial when life gets busy and we are lucky to get out of the door on time, let alone make a healthy and tasty breakfast! Well, here are 3 of my kiddos fast and favorite breakfast teats, that are winners every time!


Banana Lovers

Ingredients:

2 ripe bananas

2 whole grain waffles

1 tablespoon almond butter

½ teaspoon cinnamon

Pure maple syrup


Method:

For your kiddo, simply toast the waffles and serve with a sliced banana and maple syrup on the side! For your baby, mash the banana and mix in the almond butter and cinnamon and enjoy! I know my kids do!


Got to Love Avocado

Ingredients:

1 ripe avocado, mashed

1 slice of whole grain bread, toasted

1 egg, we like it sunny side up but however you like it will be delicious!

1 tablespoon of butter, to cook the egg in.

Salt, to taste

Chili lime seasoning, to taste


Method:

For your kiddo, spread half the avocado on the toast and top with the egg. Season with salt and chili lime seasoning. For your baby, simply place the other half on the mashed avocado in a bowl and season with salt and the chili lime seasoning. Can we say yummy brain food!


For the love of Blueberries

Ingredients:

For the Pancakes

1 ripe banana

2 eggs

¼ cup rolled oats

1 tablespoon ground flax seeds

1 teaspoon cinnamon

1 tablespoon of coconut oil, to cook the pancakes

Handful of blueberries, serve on the side

Pure maple syrup

For the Oatmeal

½ cup coconut milk

¼ cup rolled oats

1 tablespoon pure maple syrup

Small handful of blueberries

Pinch of salt

Dash of cinnamon


Method:

For the pancakes, place the banana, eggs, rolled oats, ground flax seeds and cinnamon in a blander and blend till smooth. Heat the coconut oil in a pan and dollop enough of the batter for 2 small pancakes. This recipe will make 4 small pancakes. You can make all 4 or save the rest of the batter in a container for later, it will keep in the fridge for 1 week. Serve with a side of blueberries and a drizzle of maple syrup! Allan gobbles these down every time!

For the oatmeal, place all the ingredients in a small pot and cook, mashing the blueberries as you go. Once the oats have plumped up and absorbed everything it’s ready! Serve with a few fresh blueberries and a bit more coconut milk if you like, I mean who wouldn’t right!
