Saturday Morning Pancakes

“Pancakes and bacon mommy!” That’s what Allan asks for whenever I say, “So what do you want for breakfast?” This kid I’m telling you! Well as much I would love to make pancakes every morning, there’s usually barely enough time to get everybody dressed and out the door. So, I started our little Saturday morning pancakes and bacon ritual. I love our slow family Saturdays and these fluffy classic pancakes are just what we need to start our weekend off right! So pour yourself a cup of strong coffee or if you’re like me a sparkling mimosa, pull up a chair to the kitchen counter so your kiddo can help and lets whip up some pancakes!


Ingredients:

2 ½ cups flour

3 tablespoons sugar

2 teaspoons salt

4 teaspoons baking powder

2 teaspoon baking soda

2 ½ cups almond milk (or whatever milk you like)

2 tablespoons white vinegar

2 eggs

1 stick butter, melted (hey it’s Saturday morning y’all!)


Method:

First, whisk the almond milk, vinegar, sugar and eggs together. Next, sift the flour, salt, baking powder and baking soda into the bowl and mix until just combined. Lastly, add the melted butter and mix till just incorporated. Dollop the batter into a pan over medium heat with some melted butter and cook until done! This will make 10-12 pancakes. If your family is small like mine you can always save the leftover batter in a container in the fridge for later. It will keep for about 1 week.

Also, I have used this basic recipe to make lemon pancakes with blueberry sauce, banana with cinnamon and chocolate chip with brown butter! Oh man, I’m dying just thinking about them! That’s it guys! I always serve these pancakes with a side of bacon and pure maple syrup. Can we say yummy! So happy tomorrow is Saturday!
