S'mores Rice Crispy Treats

October is in full swing, and Halloween excitement has officially taken over our house. Costume planning, candy debates, and the smell of caramel and cinnamon in the air, this is truly one of my favorite times of year. This Halloween, all three of my kids have decided to be dragons. Not coordinating, mind you, three unique, fiery, sparkly dragons with wings, scales, and a whole lot of excitement involved. The creativity (and chaos) has been next level, and I can already picture them roaring through the neighborhood with chocolate smeared grins.


Between figuring out how to turn a dinosaur costume into a dragon, (hint, add wings) and trying to keep my two-year-old son away from our Halloween gingerbread house, I wanted to come up with a fun Halloween treat that felt festive but a little elevated too. Don’t get me wrong, I love a classic rice crispy treat and all its school days nostalgia, but this year I wanted something a bit more special that tastes like campfires, cozy nights, and a touch of fall magic. That’s how these S’mores Rice Krispie Treats were born.

I added brown butter, toasted marshmallows, melted chocolate, and a sprinkle of smoked salt to tie it all together. They’re soft and chewy with just the right hint of crunch and a little smoky sweetness that makes you think of crisp autumn nights around a fire pit. The smoked salt adds an unexpected grown-up note that balances the sweetness and makes them feel a little more “artisan bakery” than “school bake sale.”


Makes 24, 2-inch squares.

Ingredients:

12 ounces rice cereal

30 ounces mini marshmallows

3 sticks salted butter

4oz gram crackers, crushed

6oz mini chocolate chips

Big pinch of smoked salt (optional)


Method:

  1. Pour the cereal, chocolate chips, gram crackers and smoked salt in a big bowl and set aside.

  2. Place 10 ounces of marshmallows on a baking tray and place under the broiler. Watch these carefully they can burn fast! Once the marshmallows reach your desired toastyness, take them out. 

  3. Brown the butter in a pan, once it smells nutty and you can see little brown bits, add 20 ounces of marshmallows and mix together.

  4. Pour the melted marshmallow mixture and the toasted marshmallows into the bowl with the cereal and mix everything together.

  5. Put the mixture into a 9x13 pan and leave till completely cool. Cut into squares and enjoy!
