I make heart shaped cookies every year for Valentine's Day and this year I decided to try a sourdough discard sugar cookies. My daughter was very excited to help me in the kitchen today. I like to use whatever I have on hand to decorate cookies. Today I had, some leftover strawberry butter cream, cherry jam and chocolate.

Ingredients:
127g sourdough discard
2 sticks butter, room temperature
380g white sugar
1 teaspoon vanilla extract
2 eggs, room temperature
1 teaspoon salt
2 teaspoons baking powder
740g all-purpose flour
For the Toppings:
For the strawberry butter cream:
1/2 stick butter, room temperature
1 1/2 cups powdered sugar
2 tablespoons strawberry jam
1/2 teaspoon salt
For the cherry icing:
About 1 cup powder sugar
About, 2 tablespoons cherry jam
About, 1 tablespoon orange juice
pinch of salt
For the chocolate:
1 cup chocolate chips, melted
Method:
Pre-heat the oven to 350 degrees and prep a cookie sheet with parchment paper.
Mix the butter and sugar together until light and fluffy then add the eggs one at a time. Next, add the sourdough discard and vanilla extract and mix together. Lastly, add the salt, baking powder and flour and mix until just combined. The dough is ready to roll out right away. Roll the dough out and cut with some cute heart shaped cookie cutters. Bake the cookies for 10 minuets or until golden brown around the edges.
While the cookies are cooling, make the toppings. using a hand mixer, mix all the ingredients for the strawberry butter cram together and set aside. Next, use a small bowl and whisk, to mix all the ingredients for the cherry icing together and set aside. Using jam is a great way to get really beautiful colors without using food die. Decorate the cookies with the butter cream, icing and melted chocolate in any fun way you like. My daughter loves helping me with this part.
These sourdough discard sugar cookies have a bit of a snap to them when they are finished as apposed to a traditionally sugar cookie that is soft and buttery. I really like that the cookies hold their shape while baking and that they don't need to rest in the fridge at all, you can roll them out and start cutting immediately.
