Strawberry & White Chocolate Rice Crispy Treats

My three-year-old son loves freeze-dried strawberries! Let's face it, they are basically strawberry chips so I can't say that I blame him. There have been many sunny afternoons, sitting on a blanket in our backyard, reading our latest library book, while he munches on an entire bag of freeze-dried strawberries! This had me thinking, what else can I do with these crunchy things? Rice crispy treats of course, but I'll load them up with extra marshmallows and white chocolate! I have wanted to make these strawberry and white chocolate rice crispy treats for months now. The time was finally right when my sister and I planned a trip to Lake Mead. She had a paddle board and two kids, and I had a sunshade, three kids and a husband. We also invited our good friend and her two kiddos. So, that's four adults and seven kids. Sounds like a good time for a fun picnic dessert!

Ingredients:
20 oz rice cereal
30 oz mini marshmallows, divided
2 sticks butter
2.4oz freeze dried strawberries, divided
8oz white chocolate chips
1 teaspoon salt
1 teaspoon vanilla extract
Method:
Butter a 9x13 baking dish and set aside. Blend half of the strawberries into a powder using a blender.
In a large bowl, add the cereal, 10 ounces of marshmallows, white chocolate, the whole strawberries and the blended strawberries, and salt.
Next, in a large pan melt the butter and marshmallows together. Be patient, you want it to be smooth and fully incorporated. Take it off the heat and mix in the vanilla.
Add the mixture to the cereal and mix it all together. Tumble everything into the baking dish and press it down to make it flat and solid.
Sprinkle over a little more freeze-dried strawberries, to make it look pretty.

The kids loved taking turns on the paddle board! (I'm pretty sure I need one now) The three older boys took the littles on rides around the lake while the adults sunbathed and sipped on sparkling wine. They made a sand wall and filled their buckets with tiny clam shells. It was a lovely way to spend a Sunday morning. And then, during a small quiet moment watching all the kids playing nicely together and holding my husband's hand, I realized,
"This is the good stuff; this is what it's all about."
