Cozy Chili

The cold winds are blowing in and we are starting to pull on our sweaters at my house. It’s days like these that I miss having a fireplace the most. If we can’t cozy up to a fire then a warm, sweet and spicy bowl of chili may be the perfect substitute.

Ingredients:

1 pound ground beef

1 medium onion, chopped

4 cloves garlic, minced

2, 15 ounce cans black beans

1, 15 ounce can tomato sauce

1/2 cup beer

2 tablespoons pure maple syrup

1/4 cup brown sugar

1 teaspoon salt

1 tablespoon paprika

1 teaspoon cumin

1/2 teaspoon oregano

1/4 teaspoon cayenne pepper

1/4 cup corn flour

About 2 tablespoons or Butter, olive oil or bacon grease.

(I use bacon grease and butter)


Toppings:

Cheese

Avocado

Sour cream or yogurt

Tortilla chips


Method:

Place your pot on the stove over medium heat and add the bacon grease and butter. Add the onion and cook until soft. Next, add the spices and let them toast a bit. Then, add the garlic, once fragrant add the ground beef. Use a fork to break up the beef and cook until brown.

Next, add the black beans, tomato juice, beer, brown sugar, maple syrup and corn flour. Give everything a good stir, put the lid on and simmer for 30 minutes. Now, cozy up on the couch, play your favorite Harry Potter movie and enjoy!
